Mediterranean Grilled Eggplant

August 13, 2007


1-2 lb. fresh eggplant, sliced into 1-2″ pieces
olive oil non-stick spray

Seasonings: (to taste)
- cayenne pepper
- oregano
- garlic powder
- sea salt and pepper

Slice eggplant, place on grill and season. Grill until tender, about 5-7 minutes.
